From Me to You:
Pakoras: When You Can’t stop at one!
It’s just a mess of chick pea flour batter, some rice flour, some spices into which you throw whatever you please – onion rings, pieces of cauliflower, potato circles, spinach and whole green chilies. Once you deep fry these in hot oil – you have a knockout treat – pakoras! And I dare you to stop eating at just one!One of the most beloved of Indian snacks and street foods – and also a comfort food that families regularly whip up at home – pakoras are almost as ubiquitous as samosas.
People especially love them with hot chai on a monsoon evening. Hot, crunchy pakoras evoke home and family in so many ways. You have to close your eyes and relish them – and forget the calories!
They are also known as bhujjias and you won’t be able to find an Indian who doesn’t go weak in the knees when faced with bhujjias. Heaven dipped in mint chutney, tamarind chuteny or even tomato ketchup!
I’m working on a piece about the history and allure of pakoras and the different ones you find in India and Pakistan – and across the diaspora. If you have any offbeat or unusual home recipes to share with me, please do!
Meanwhile here’s the Instagram post I did a few days back – and as you can see, people just have to like a pakora post! They can’t eat it – but it makes them happy!
